The organic extra virgin olive oil Prim’Olive from Vigean is an extra virgin primeur olive oil from an early harvest. It is unfiltered and obtained by first cold pressing. In addition, it is made from green olives harvested and pressed as early as October.
One liter of oil requires 9 to 12 kg of olives. Since green olives naturally contain more antioxidants than ripe olives, this oil offers a particularly high concentration of protective compounds. Moreover, because it is unfiltered, this natural richness is even better preserved.
An intense and well-balanced aromatic profile
This extra virgin olive oil stands out for its perfect balance between peppery intensity, fine bitterness and rich fruity notes. First, the nose recalls freshly cut grass. Then, depending on the year, notes of artichoke, tomato or apple appear on the palate. Finally, its deep green color reflects both freshness and natural richness.
