Organic sardines in extra virgin olive oil from La Compagnie Bretonne show traditional Breton cannery expertise. First, the team processes the sardines fresh as soon as they arrive from the fishing ports. Then, artisans fry the fish using a traditional method. Next, they place the sardines by hand into tins and add carefully selected organic extra virgin olive oil. As a result, the natural flavor of the fish remains well preserved.
This signature recipe appeals to lovers of premium canned organic sardines. Indeed, the sardine Sardina pilchardus is caught only during the main fishing season from May to October. During this period, the fish becomes fuller. Therefore, it develops a tender texture and a richer taste.
Fishermen land the sardines mainly in the ports of Lorient, Concarneau, Douarnenez and Saint-Guénolé. In addition, some catches arrive from Saint-Gilles-Croix-de-Vie. Afterwards, the cannery in Penmarc’h prepares the fish quickly to maintain freshness.
First, artisans remove the heads and guts by hand using a knife. Then, they fry the sardines in oil. Thanks to this traditional cooking method, the sardines develop a slightly confit texture. As a result, seafood lovers appreciate their rich and authentic flavor.
Next, the team places the sardines in tins entirely by hand using the “en bleu” method. Consequently, the backs of the sardines are visible when the tin is opened. Therefore, this presentation clearly reflects careful artisanal work.
Finally, the sardines are covered with organic extra virgin olive oil. This oil enhances the fish while preserving its natural taste. Therefore, these organic sardines in olive oil pair perfectly with bread or potatoes. Moreover, they work well in simple homemade recipes.
