The albacore tuna pieces in organic extra virgin olive oil from La Compagnie Bretonne offer the quality of white tuna in a practical everyday format. The Thunnus alalunga, also known as albacore, features light-colored flesh, a tender texture and a delicate taste. Therefore, it is ideal for quick and easy recipes.
First, fishermen catch the albacore tuna during the main season from August to October in the Bay of Biscay. Then, they land the fish in the ports of Le Guilvinec, Concarneau or Lorient. During this period, the tuna shows optimal quality with firm texture and consistent flesh.
Afterwards, the cannery processes whole fish in its Breton workshop. First, artisans remove the head and extract the finest parts such as the belly cuts. Then they remove the bones and carefully lift the fillets by hand. Finally, they clean the meat and remove darker parts.
Once prepared, the fillets are cooked and cut into small pieces. These become the tuna pieces, made from cooked albacore fillets. Next, the team mixes them with oil and packs them by hand into tins. As a result, the texture remains soft and even.
Finally, the tuna is covered with organic extra virgin olive oil. This oil enhances the fish without masking its natural flavor. Therefore, these albacore tuna pieces in olive oil are perfect for salads, sandwiches or simple everyday recipes.
