There are two methods for decaffeinating coffee. The “gentle method”, the only one certified organic, consists of immersing the green coffee in carbonated water (water and CO2) to extract the caffeine naturally after several baths. The chemical method, widely used in industrial coffee, uses chemical solvents to extract the caffeine from the beans.
